Wild Mushroom Sunday Brunch~

Greetings, folks!

Here is a lovely brunch idea!! I created this last weekend from wild-foraged "chicken mushrooms" & oyster mushrooms which my good friend Sandy found & gifted me, and they were phenomenal!!!!! Of course, be sure when wild-foraging anything, especially mushrooms, that they are correctly identified or from a reputable forager/gatherer!!!!!! I cannot stress this enough.

Here is a run-down & visual:

Amounts are flexible, but I basically chopped a pan full of mushrooms & sautéed them in a bit of extra-virgin olive oil, garlic, & dehydrated onion powder for a good 20 minutes. Be sure they are well-cooked but not overdone, juicy & tender!

Then add wild spinach, or if you don't have any wild greens use spinach, baby spinach, kale, collards, chard etc! The sky is the limit with breakfast scrambles. This recipe is merely a guideline, especially of how to use a few wild edible plants. Add any herbs, spices, salts & peppers you would like!!!!! I love using fresh thyme and/or basil when I have it on hand, cayenne, pink Himalayan salt, & often a pinch of curry, garlic and/or onion powder for extra flavor!

After everything is softened & seems deliciously done, add a few beaten eggs (I usually just beat by themselves, not adding milk, cream of water). I only used 6 here, but could have done more! As long as there are enough eggs to reasonably bind the rest together....

"Stir-fry"/scramble over medium heat until done!!!!! We added great gobs of cheese & ate it right up, forgetting to photograph the last step, but it was *already* delicious without it!!!!

Enjoy!!!! Play with the recipe & tweak to your personal fave tastes. Enjoy the rest of your weekend!!!

Love, Christine Elizabeth xo

Tonight's Dinner: Chicken & Rice Stew W/Garlic Indian Chapatis

Here is a warm, thick, nourishing stew perfect for a long rainy day like today, and most of this week has been.......Appearing to have been simmered for hours but, with the addition of lightly-sautéed chicken breast chunks, is much quicker in a time-crunch than the traditional boiling & deboning of a whole chicken like I would normally do. And paired with yummy salted garlic Indian chapatis, fried on the grillpan or griddle, it's the perfect simple, healing comfort food for a cool rainy evening.....

I quite simply, sautéed cut up carrots & celery in just a bit of olive oil, seasoned with garlic, onion powder, salt & pepper etc., whatever you would like, in the bottom of a soup pot, for a few minutes, while simultaneously sautéing generous chunks of cut-up chicken breast in garlic (fresh or powder) & salt, pepper, butter or olive oil in another frying pan/skillet. Turn off chicken when just done & lightly golden, & save to put in the stew at the end.

After garlic, onion, carrots, & celery are mildly softened, throw some rice in (I used a good 2-3 cups uncooked jasmine rice, it turned very thick & creamy like a risotto), sauté a minute or two, & then fill the pot with water. Cook on a low-medium boil until everything is tender & the rice is cooked & done. I boiled it a bit extra (taking extra care the starchiness of the rice does not make it burn on the bottom) to make the rice extra creamy. Throw in the chicken breast chunks when it is finishing up. I added a generous amount of dried parsley to finish it also, but if I had fresh I would have used it instead! Season with any extra salt, pepper etc. you would like, & serve hot with the freshly-made chapatti.

I'm sure this simple stew with rice would be delicious to try with cut-up (think leftover?) steak or fish also! Try any sautéed vegetable in season. Asparagus would be just beautiful with the risotto-style creaminess of the rice. Currying the entire stew would be another wonderful, warming option! So would a generous pinch of red pepper flakes or ground cayenne. Use whatever you have on hand.

                                                                     Chapati

Chapatis are sooooooo simple to make! :) Very good on a budget too! All you need is a little flour, water, & salt (or try a little natural raw sugar if you want to make a sweet one...yummy!!), & a bit of oil. If you have garlic or other spices you want to try (think rosemary, thyme, oregano, etc....), feel free to add them either in the dough or on the chapati as you are cooking them. Experiment with both fresh & dried herbs~ this flatbread is easy & versatile. Use another oil, such as coconut or sunflower in place of the olive oil, & it is Lenten/fastworthy to boot!

*Makes 10 servings

    1 Teaspoon salt

3/4 Cup warm water, or as needed

    1. In a large bowl, stir together the flour and salt. Use a wooden spoon to stir in the olive oil and enough water to make a soft dough that is elastic but not sticky. Knead the dough on a lightly floured surface until it is smooth. Divide into 10 parts, or less if you want bigger breads. Roll each piece into a ball. Let rest for a few minutes.
    2. Heat a skillet over medium heat until hot, and oil or butter lightly. On a lightly floured surface, use a floured rolling pin (they have little pita/chapatti rolling pins too which are great!) to roll out the balls of dough until thin like a tortilla, or a pita, depending on what you want. Its a pretty flexible foolproof dough/recipe. When the pan starts smoking, put a chapati on it. Cook until the underside has brown spots, (about 30 seconds to a minute or so for small ones, more for larger thicker ones), then flip and cook on the other side. Continue with remaining dough. Be careful not to burn. sprinkle with herbs, salt, sugar, or whatever comes to mind. These are best served hot & fresh, but we eat leftovers cold or reheated too. The leftovers get gummy overnight, but still are very tasty .

Enjoy your quick, healthy, nourishing, home-cooked supper. Have a beautiful evening!!

Spicy (Lenten-Worthy) Lentil Summer Rolls & Other Healthy Travel Snacks...

These look terrific!! Easy to adapt to Lent/Fasting days too.....

Make sure if making for Lent/fast days, to find a vegetarian/vegan version of the sauce it calls for... many Asian sauces contain fish sauce/product....otherwise I think it is perfect from what I could see! I can't wait to make these! Recipe courtesy of our friends over at Sprouted Kitchen. Blessings, & let me know how they turn out!! :)

      Healthy Fermented Quinoa Chocolate Cake.....Mmmmmm!

Completely healthy superfood dessert, courtesy of Food As Medicine.

      http://www.foodasmedicine.ca/2013/fermented-quinoa-chocolate-cake/

I had to include this humorous pic, I couldn't stop laughing as its so "me"! ;-)

      Okay, here is the recipe!!!

      Ingredients
      ¾ cup quinoa (fermented, drained p. 126)
      1 ½ cups water
      ¾ cup butter
¼ – ½ cup milk (or almond milk, or water)
      4 large eggs
      1 tsp vanilla
      1 cup jaggery (gur)
      1 cup cocoa powder
      1 ½ tsp aluminum-free baking powder
      ½ tsp baking soda
      salt
      Directions
Drain soaked quinoa, rinse, bring to a boil in twice the volume of water and let simmer for 20 minutes. Allow to cool, fluff with a fork. Melt the butter and set aside to cool, greasing two 8-inch round baking pans and preheating the oven to 350°F. In a blender combine the milk, eggs, vanilla and cooked quinoa, and blend to a custard-like consistency. In a separate bowl whisk together the jaggery, cocoa powder, baking powder, baking soda and a pinch of salt. Mix well then add the wet ingredients to the dry, mix well, and then pour into two cake pans. Bake for 40-45 minutes or until a knife comes out clean. Serve with fresh whipped cream sweetened with a little maple syrup, or homemade strawberry-rose ice cream.

Kamut Kombucha Oven-Fried Chicken!!!! YUM! Very Healthy!!

Wonderful, Healthy, Ancient Kamut mingles with the benefits of extra spices, healthier lighter fats, & even a dash of fermentation if you make it the Kombucha way! *LOVE THIS!*

I made this last night, & hubby made a big salad to go with. We took turns watching baby Ronan, who is into everything lately. ;-)

So my story is, I actually didn't have buttermilk on hand the other day when I put it to marinade!!! No problem I thought, I'll google buttermilk DIY again to get theh ratio to make a faux version... Oh, I don't have lemon or vinegar on hand either!! Okay, experiment time. I added a couple teaspoons over-fermented KOMBUCHA vinegar (live cultures!) to regular whole milk & poured it over the raw cut-up chicken. I only wish I had raw milk on hand. ;-) It turned out marvelous!!! I use Barefoot Contessa's recipe as a base, but then tweaked it in many ways to make it healthy-changing the oils, the flour(s), adding spices, etc. It turned out awesome!! Enjoy!!!!! Xxo

      Ingredients

      • 2 chickens (3 pounds each), cut in 8 serving pieces (I just make one sometimes, even.)
      • 1 quart buttermilk (Or add a couple teaspoons lemon, vinegar, or kombucha to regular milk, etc., or use yogurt!)
      • 1 cup organic kamut flour
      • 1 cup organic flour or sprouted flour (Sprouted is my favourite!!)
      • 1 tablespoon salt (I add Adobo too often, its in the Hispanic section & delicious, contains garlic, turmeric, oregano, salt & pepper etc.)
      • 1 tablespoon freshly ground black pepper
      • Liberal amounts of garlic powder, cayenne, & organic salt-free Cajun spice mix
      • Vegetable oil - (I used Sunflower, & a healthier Omega-3 mix by Smart Balance as well-you could cut with lard for a traditional touch too)

      Directions

Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
Preheat the oven to 350 degrees F.
Combine the flours, salt(s), spices, & pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-3" and heat to 360 degrees F on a thermometer.
Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 45 minutes, until the chicken is no longer pink inside. Serve hot.

      A Short Bio....

Leaving the suburbs of Bethel Park, PA, & moving to the Deep Woods of Central Maine with my family as a 3 year-old is still a fond memory! They converted to Amish-Mennonites, homeschooled, & lived the homesteading/self-sufficient Sustainable Dream the entire time I was growing up. ♥

In my young adult life, after my family left it finally (parents divorced & in many ways went back to the way they were 17 years prior....& us kids followed suit), I've missed the Divine Simplicity of such a traditional lifestyle, seek to continue as sustainably, artistically & culturally rich a lifestyle as possible, & have been on a quest to keep the values of how I was raised and assimilate them into modern, everyday living.

Add to that a full philosophical quest including my fiery Greek heritage & converting to Greek Orthodoxy in my early twenties (I left it for a while but have come back full circle with a broadened perspective on Life.......I feel the most at peace with Orthodoxy personally, they are very open, loving, non-judgmental, & mystical!...) etc., a PASSION for all yoga, fit & healthy lifestyles, & many useful healthy Ayurvedic traditions & sciences etc., & a fierce global love for all people, cultures....and FOODS! ;) ♥

I am now an extremely proud Mama of three beautiful little boys, ages 8, 6, & 10 months currently. ;) I love attachment/green/natural parenting, & trying to strike a balance between their obvious modern-day cultural love of media like their little school friends, & more *traditional* play & classic toys or outdoor activities- I am a FIRM believer babies & children *need* to be out in Nature as much as possible!!!! Our favorite thing to do is explore for new streams, lakes & trails together, little hidden nooks, swimming, & skipping stones. :) We also love to read Grimm's fairy tales, & folk tales around the world, make pillow forts & battles, & sometimes they cook, craft with me & make creative messes which is another favorite!!!! ♥

My "second love" is of course yoga/stretching/Pilates/fitness, which consistently in my experience heals basically everything in the body when I practice regularly, including joint pain, stress, and most everything else. :) I have had a love affair with yoga for about 14 years, and my dream is to officially get the teacher training & teach it every day...so that I HAVE to practice daily, no excuses, & reap the health benefits & stronger immune system! ;-)

My third is a deep love for delicious, irresistible, healthy cooking, & the superfoods, fermenting, foraging wild nutritional goldmines....The Quest for always the best possible nutrition, healing & living to our full potential through REAL FOOD! I teach these things & blog about wonderful recipes & techniques I come across, our experiences, daily life etc. already, & want to teach Yoga & perfect Traditional Nutrition professionally, to help more & more people feel the difference! ♥ I wish everyone could know, especially in first-world countries, the difference it feels & makes to eat REAL FOOD and everything else the modern world is forgetting!!!!!! Its an epidemic & we need to get back to the basics before we all forget.

I write about all this when I have time, ;) document, blog, photograph, create, enjoy many arts & crafts including some very old skills, live life to the fullest with my precious family, & pray for Universal Peace, Love, Awareness & Authentic Living inside & out including a respect & healing of Nature, God's Sacred Creation, before it is too late for our children.

I'm also an optimist, have experienced & overcame substantial difficulties & heartache in my life including the early years, and believe Laughter truly IS the "Best Medicine". ;-D I LOVE to laugh & just surrender everything up in the moment in a giant laugh! Ha! Ha! I love humor of almost all types. Make me laugh hard, I'll be your friend forever. ;)

Let's see... also am extremely fond of babies, animals, & flowers, my favorite of the latter being the lotus, water lilies, wild & ancient damask roses, lilies & apple blossoms.

I'm NUTS about anything  ethnic, global, Indian, handmade, rustic, & Bohemian especially~ to my mind, they are simultaneous words for Beauty, & I love to search thrift stores for vintage Boho & Indian touches for anything at all! :) I'm a lover of all things beautiful, happy, & good. Design & creativity, organization skills are some of my strongest points!! I try to keep it sustainable as possible though, & "live more with less". I learned the hard lesson, be happy with what you have!!!! If you need something or could really use it, look for it used or free or just do without maybe...OR, make it yourself! :) Its the antithesis of materialism. Haha! ♥

Well, there is so much more to say, but you'll have to read the blog! ;-) Xoxo LOVE to you all! Peace & Blessings! ♥

MACA, the Incredible Superfood for Libido & Stamina

Good morning & Happy Monday, Folks!! Have you tried (or even heard of) Maca, the South American superfood  yet? If you haven't, you will soon as its exploding onto the scene as a fantastic aphrodisiac & stamina-booster!!!!!

Maca is a root vegetable grown high in the Peruvian Andes. It was sacred to the Incas and has been used as a food and medicine in South America for centuries. It is well known for its ability to help enhance strength and endurance. In fact, it is said that the Incan warriors would consume maca before long journeys and even battles. Today's warriors (athletes) are confirming what history has to say about this incredible superfood.

Seriously worth checking out, folks! I'm vouching for this, its a powerful food/supplement!

I do encourage you to use/eat in raw powder or food form, not pills/capsules etc... From what I've heard, it can be very watered down in pill form, & people either don't feel it, or start taking more than the natural recommended dosage. Trust me, just get it as a raw, organic FOOD powder & keep in fridge or freezer once opened, its amazing that way & stays fresh for a couple months!

I add heaping tablespoons of the raw dried root powder to my "famous superfood smoothies", and find them to be very effective! The natural energy burst feels like a couple cups of coffee without the jitters, & just lasts & lasts. Its an aphrodisiac that actually seems to work, too! My girlfriends & I are all abuzz about it for months now!!!! Here are some great basic ideas:

These are very similar to smoothies I love to make. MMMM!

The Optimal Breastfeeding Diet: Make Super-Milk for Baby

Many of you have emailed & asked me about traditional breastfeeding diet examples. From what I've researched from other cultures, as many women without these tips & tricks in America (myself included) struggle(d) with low milk supply out of accidentally eating/drinking the wrong things. I know, its an initially very surprising thought to me as well, but makes perfect sense, right?!

For example, did you know such things as parsley, oregano, sage, mints etc. actually decrease milk supply? Not to mention coffee, one of the biggest! With my first baby, Demetri, my husband had cancer at the same time he was born. I started drinking a decent amount of coffee to try to stay awake to care for both of them, & struggled with low milk supply the entire almost-year I nursed him. Never put the two together until I read about it later. Aha! moment.

I cannot recommend the book "Mother Food" by Hilary Jacobsen enough.... every breastfeeding (or intending to breastfeed) mama should read this book. It became my Bible when I stumbled across it finally!

Here is what I'm personally eating/have eaten for galactagogues/milk producers while at same time providing enough nutrition/& still very importantly, enough fats for baby's developing brain. I do love sweets & carbs but tend to follow a more Weston-Price/Paleo/Traditional diet usually. Unless I'm feeling like it would be good to add a sweet like Halvah, which is a major galactagogue made almost exclusively from sweetened SESAME seeds- one of the biggest "galas", btw. Gala is milk in Greek, & let's just call it this to make it easier than writing out & reading "galactagogue" every time. ;-)

The following are from notes I took when baby "RoRo" was only 2 or 3 months old. He is now an amazing, vibrantly healthy 10-month old guy who loves to feed himself, crawl & jump everywhere, & still breastfeeds, but much less.

Breakfast: I regret to say I had only a large mug of very spicy milky chai, raw whole milk only of course, I used organic ready made chai concentrate (but usually have homemade chai & ginger tea concentrate on hand, I add extra spices that way), & added extra tea masala (the spice that makes chai into "chai", & have that spicy taste we know here in the USA as "chai", although in many cultures chai actually just means tea, but that's another story ;-)), from the Indian grocer & stir it in, I do an extra half-teaspoonful. The milk & spice is why I drink it, watch your caffeine levels (I do a mix of reg & no caffeine). Let me interject here, in the last month of pregnancy I quit coffee cold turkey again & switched to chai  because as I said, I learned years ago (the hard way) that coffee is the single most anti-galactagogue out there- (yes I miss it, I love coffee!) but it is *awful* for healthy milk supply, so be careful when adding it back or drinking it. Not to mention the adverse affect it can have on baby. Traditional cultures & diets stay away from it entirely.

Healthy, "Supermilk" breakfast items to add to your morning chai are eggs (foraged or free-range are preferable as they contain very dense amounts of nutrition & protein, much more than grain-fed eggs), oatmeal with raw honey, fresh fruit etc. I often nibble some cheese or spread sesame tahini (another huge gala)  or almond/peanut butter (gala & protein) on a piece of multigrain toast or English muffin for a treat (not paleo but so yummy, lol). Adding spinach/kale & other veggies to omelets is fantastic! And so much more. I loved a mug of leftover homemade soup for breakfast too. So many nutritious, non-sugary, galactagogue, superfood breakfast options available! Be creative, & think about the nutrition of each choice you make.

Lunch: a bowl of hot spicy chickpea curry- curry spices are fantastic galactagogues!  Mixed with yoghurt to cool it down (Ayurveda, plus whole milk Greek yoghurt is more good fats for baby), & small fresh salad or fruit, & a glass of malted whole raw milk (malt- another big "gala"!)

Snacking: Smoothies, raw fruits & veggies throughout the day if you can, if $$/a budget is an issue even things like bananas are fresh & cheap, & drink LOTS of water. I keep a quart jar upstairs & downstairs and drink & refill them constantly!! "Mother's Milk" herbal tea in the afternoon, evening & night too. I haven't gotten prenatals refilled yet & planning to for optimal backup "nutrition", but prefer eating healthy for him than relying on a dead pharmaceutical (V. fresh live nutrition & vitamins) to supposedly nourish my child (wry face). The ones I liked were by Solgar, from any health food store.

Dinner: We love fish like wild salmon (the most nutritious for baby), red meat like beef & venison, clean chicken... Protein levels are a must for you & baby... Stir-fries with chicken, greens (as much greens as you can!), spices, etc., fruits even (try pineapple, mango etc pieces-yum!!!) are just phenomenal. Be adventurous. Research superfoods, they are you & your family's new best friends! Eat as many as you can a day. I read somewhere, "Eat a Rainbow a day of fresh fruits & veggies-as many colors as you can!" All that amazing nutrition is being passed directly to your baby.

I ate high amounts of fat the first 6 months after I had this third baby. Infants NEED healthy fats for brain development, & from what I've read & heard, dieting or not eating these fats like Omega-3, DHA etc not only reduce breastmilk, but are not the best for baby's brain development. Add to that, losing weight at too fast a pace can actually detox directly into breastmilk.... also not the best start for Baby. I think its 1-2 lbs a week to safely, gradually lose the "baby weight" while breastfeeding postpartum. Nourish yourself so you can feel good nourishing baby!

Make pre-cooked meals. I make roasts & slice in fridge for grazing or sandwiches or anything, really (including turkeys-yum!!!), keep salad ingredients on hand, hard-boiled eggs, cheeses etc... I cook huge pots of soups, stews, curries, stir-fries & freeze them in ziplock bags in portions- individual/couple & family-sized :) Defrost in a bowl of cold water, on stove in a little water in a pan on low/medium heat, or overnight in fridge if you don't use microwaves. It all helps so much when Baby just doesn't want to be put down!

Steer clear of soy products while breastfeeding unless he has a dairy allergy, etc., & even then be very careful & selective as to how much you intake. It can powerfully affect hormone levels & is usually GMO anyway unless certified organic & certified non-GMO.

Superfood Smoothies: Okay, my personal FAVOURITE LOVE. I get these raw superfood powders from Wegman's, they are AMAZING! Maca (my absolute fave-incredible energy & stamina!!), Pomegranate, Acai, Goji Berry, etc... even raw Cocoa. They also carry non-GMO organic whey protein if you are doing as a meal replacement. These are all a bit of an investment, between $7-20-ish, but last months, as the serving size is a tablespoon. Ration it (or don't), they make you feel sooooooo good, full of vitality!! I just can't say enough about these superfood smoothie concoctions. I add frozen (organic when possible) fruits, sometimes a handful of spinach, any extracts you want or extra things (I've done sour cherry extract, raw aloe vera juice, chlorophyll, wheatgrass etc. - you can hide all kinds of things, I'm sure cod liver oil even could be hidden ha!). I usually just add water to blend, but sometimes I add a little carrot or orange juice. Hubby likes maple syrup or other clean sweeteners, but I don't usually need it, tastes so yummy already!

Hopefully the things I have listed here will provide a jumpstart to a new mama looking to improve supply, or figure out what could be happening if other causes have been ruled out, such as not drinking enough water, not nursing baby enough/on demand, or taking baby's cues to feed more for a growth spurt, etc.

In conclusion, if you think a food or drink may be affecting your breastmilk, simply Google it, read Mother Food & other books on it, refer back to this article, or take personal notes & see if there is a pattern after eating certain things. All babies & mommies are different, so as I always say, do what works for You & your family.

Love, Best of Luck, & above all, Happy Breastfeeding!!!!!

      Warmly, Christine Elizabeth xxo

Coconut Oil As Sunscreen? Or, the Vit. D Deficiency Epidemic

                                                               Coconut Oil as Sunscreen?

"According to interesting info I receive from coconutresearchcenter.org, they claim that coconut oil is the original suntan/sunscreen lotion.  It amazes me how many uses there are for health in regards to coconut oil, but with regard to sunscreen, generally sunscreens we use have chemicals like oxybenzone, that disrupt the hormone system and certainly are not good for children (unless listed as organic).  This may be a great alternative to try the next time you are in the sun.
They explain that people living on islands have been using it for this purpose for generations. When sunscreen lotions were first sold commercially the main ingredient was coconut oil. Over time, however, coconut oil was replaced with chemical sun blocking agents.
Sunscreens are rated by their sun protection factor or SPF, which is a measure of how much UV radiation is blocked. SPF numbers usually range from 15 to 100. The higher the SPF number, the greater the effect. You might think that an SPF of 30 to be twice as good as an SPF of 15 and that an SPF of 60 is twice as good as SPF 30, and so on. But that is not how it works. An SPF of 15 blocks about 94 percent of the UV radiation, an SPF or 30 blocks 97 percent, and an SPF of 45 blocks about 98 percent. SPF values above this are really meaningless.
Coconut oil is a proven sunscreen that is still used by millions of people in the tropics as their sole source of protection from sunburn and skin cancer.
How does it compare to commercial lotions? In India the oil is a popular lotion used for this and other purposes. A group of Indian researchers set out to find the answer to this question. They measured and compared the ability of various edible oils in absorbing or blocking the transmission of UV radiation. The oils they tested included coconut, peanut, castor, sunflower, sesame, olive, cod liver, and neem seed oils. The oils that blocked the most UV radiation (40 percent or more) were neem seed, sunflower, sesame, and cod liver oils. Cod liver oil was the most effective, blocking up to 90 percent. In contrast, the other four oils blocked less than 40 percent.  Next to castor oil, coconut oil allowed the greatest penetration, blocking only about 20 percent of the UV light.1
Judging from this study, the SPF of coconut oil would probably be rated very low. At least lower than most other oils and especially lower than sunscreen lotions. While at first glance this study seems to question the usefulness of coconut oil as an effective sunscreen lotion, but in reality it shows its superiority.
SPF essentially measures how much UV radiation is blocked. When you block these natural wavelengths you can cause more harm than good. Getting adequate natural sunlight is beneficial and healing. Sunlight helps balance hormones and is necessary for the production of vitamin D.
Vitamin D has been gaining a lot of attention in the scientific community in recent years and for good reason. Vitamin D is necessary for the formation of healthy, strong bones and for the prevention of osteoporosis, rickets, and osteomalacia. It is essential for proper immune function and is needed to help fight off infections, inhibit the development of autoimmune diseases (diabetes, lupus, MS, etc.), and block the formation of cancer. In addition, vitamin D helps regulate blood sugar levels, moderate blood pressure, ease chronic inflammation, helps prevent dementia, and can even ease risks associated with exposure to radiation.
Unlike other vitamins, vitamin D is produced by the action of UV rays from sunlight interacting with cholesterol in our skin. There are very few good dietary sources of vitamin D. The best sources are organ meats, particularly liver. If you don’t eat liver or fish liver oils then you must get your vitamin D from sunlight. Unless you regularly eat organ meats, it is impossible to get enough vitamin D from food alone. Dietary supplements are a poor substitute for natural sources of vitamin D, and usually do not provide an adequate amount to satisfy needs. Therefore, sunlight is your best option.
Consequently, most of us are vitamin D deficient. Many of the health problems people battle with nowadays are either caused by or at least intensified by a vitamin D deficiency. Simply getting more exposure to sunlight could make a very significant difference in many people’s health.
This problem has been compounded by an obsessive fear of skin cancer which has been drilled into us by the medical community and sunscreen marketers. We are continually warned to avoid getting too much sun and always put on protection when we do. It is wise to avoid getting sunburned, but not to avoid the sun altogether as many people seem to do. If you put on sunscreen, you block out the UV rays needed for vitamin D formation.  With sunscreen covering your body, you can bask in the sunshine for hours and produce little vitamin D.
Coconut oil protects the body from sunburn and skin cancer without blocking the beneficial UV radiation. Coconut oil doesn’t rely on blocking out the sun’s rays, it works by preventing free-radical reactions which lead to all the consequences caused by overexposure to the sun. So the SPF number of coconut oil is meaningless.
If you live in a climate that is cool during the winter, you probably do not get much exposure to sunlight for a good part of the year. If you’ve been indoors for six months and immediately go out in your swimsuit on a sunny day, your skin will be very sensitive to the sun even if you put coconut oil on. You need to “season” your skin before spending too much time in the sun at the beginning of summer. The way you season your skin is to rub a thin layer of coconut oil over all your uncovered skin, go in to the sun for 15-30 minutes, just long enough for your skin to become faintly pink, but no longer. Repeat this process in the next day or two, staying out five or 10 minutes longer. Repeat again staying out a little longer each time.   Long term sun exposure is not safe on your skin unless protected by clothing or hats.  Even though this method of sunscreen is reported to be your safe answer to protection from dangerous sun rays, please go by your own skin type and experiment with coconut oil to be sure that its effective for you.  There is also the alternative organic sunscreens available without avobenone or oxybenone which is unhealthy for you."

My Personal Natural Beauty Secret Ingredients!

I am going to share with you all, my personal "Beauty secrets"..... And they are very simple, actually. Ingredients, not pricey products. Do it yourself right at home! :-)

Below is an excerpt from a longer article I wrote on the "Anti-makeup Campaign, Or, Feed Your Face!"

I extracted (pun intended) the ingredients from the article so you can keep the list easily bookmarked & handy!

Besides drinking lots of water & good herbal teas, & getting adequate rest & eating healthy, getting exercise when possible, here is my list of actual "ingredients, not products", I use:

      (1) Water. LOL I know but, seriously. I rinse my face in the morning if I don't shower right away, with cool, fresh water from the sink. I do not generally ever use soaps or cleansers besides my shampoo & sometimes a bodywash. (I'm usually in a hurry so I pick a lovely-scented, as natural/organic/clean as possible but it changes according to my budget, safe for entire body, shampoo for showering whole body & even shaving usually.) I just rinse my face & wake up by splashing cool water over it, & pat dry with a towel.

      (2) Rosewater. I don't make this, but I should learn how. I spray it on my face as often as I think to, between once a day & several x a day if its hot or etc. I let the mist dry on my face. It smells ravishing & edible to boot. REAL roses, rosewater, rose oil etc. has many beneficial & healing, beautifying properties & qualities. It is also known to be soothing & calming, and romantic/sensual.

      (3) Pure edible oil(s) such as coconut, emu, carrotseed etc. I've used sunflower, grapeseed too etc. Only a drop or two. Coconut oil is awesome on your whole body too. I don't usually moisturize my entire body unless rarely in the dry winter months, or over sunburn perhaps on rare occasion, but I do my face, neck & collarbone area ("décolletage").  Sometimes if it feels dry I will use more, like a little palmful on the face & even pat the excess off once its drenched with oil. If it feels oily, I don't moisturize for a little while. Rosewater is sometimes soothing & moisturizing enough I've noticed, especially lately this past spring & summer. I used to use a lot more oil, now I use less.

      (4) Pineapple. A little piece of fresh (or canned in a pinch) pineapple (or papaya too I've heard) contains enzymes that eat dead skin cells, its awesome! Like once a week or month, rub a little piece of it all over your freshly-rinsed or washed face (put your hair up first). Let the juice dry on your skin about 15 minutes, less for sensitive, a bit more perhaps for the first time). Then wash it off with a washcloth or simply rinse it off with warm or just cool water. You will see results, it is just lovely! Makes your face shiny-cute, rosy & reveals the fresh layer of new skin underneath. I love it! I haven't done it in a few months, I'll have to go grab some pineapple at the farmer's market next time, eat some & then rub a piece on my face for a little mini-facial! :)

      (5) Pure essential oils, like from Mountain Rose Herbs or another reputable herbal source, are great to collect. Don't fall for over-priced blends from new companies springing up, however. They should only be about $5-15 an ounce/half ounce & contain only the pure essential oil. Unless it is PURE Otto of Rose, Rose Attar or other rare precious pricey famous oils (Ylangylang is another, etc.), I'm talking things like sweet orange, lavender, rosemary etc.

Pure essential oils are fabulous to have on hand to put a couple drops in a relaxing beauty bath with some baking soda or Epsom/mineral salts, very easy DIY bath products. You can blend them yourself & tailor them to what YOU like. I repeat, don't waste your money for blends someone else created if they look overpriced! Do the research (just Google it or pick up a book about aromatherapy) yourself, & save tons of money. They last forever, too. I get a vial of lavender oil once or twice a year & its no more than $6-15 usually depending on market price & availablility. Lavender pure essential oil is nice to wear on the wrists too & temples if you have a headache or want to relax. Keep away from the eyes though, like any other essential oil. Most of them need diluted, they are very potent.

      (6) Baking Soda. I love having this around!! It is dirt-cheap too, ridiculously so. Makes your skin SOOOO SILKY IN BATHS!!!! Dump half a small box in.... at most you are paying thirty to sixty CENTS for a silky, sensuous, amazing bath. The beauty industry doesn't want you to know this, ha! You can also make a thin paste from it with couple drops water (or rosewater!) & use it for anti-perspirant too, although interestingly sometimes you can break out in a rash from using it, if your lymph nodes go into detox, which is normal. Discontinue use if uncomfortable on the underarms, or if you want to do a full lymph node detox, use it daily & watch the results. It eventually goes away & takes the junk your body has stored from previous toxic products, in your lymph nodes, away & many people find it to be an effective odor control & anti-perspirant, without the highly toxic "Cream of aluminum" as I jokingly call it, mainstream deodorants/anti-perspirants. I'm in the process of experimenting with DIY recipes of deodorants to find the "perfect" recipe that is easy to use & causes less heavy detoxification right away.... & I will let you all know when I find it!!!!!

      (7) Tea tree essential oil for acne & blemishes.... just a tiny drop or two on each one... it is a very powerful drying & antiseptic agent. Works on most pimples in a day or two!

      Happy Skin-Nourishing! :-)

      Have a beautiful week!!!!

      Love, Christine Elizabeth xo

Anti-Makeup Campaign- Or, Feed Your Face!

Good morning my dear readers!!!!! Listening to a little Bob Marley, drinking coffee, baby sleeping, time to blog a little! How is everyone today?

Okay, so I am caffeinated & about to launch into what could be either a revelation or a very touchy subject....for women mostly that is! The subject of makeup/cosmetics/beauty products & the multi-BILLION-dollar annual revenue it generates!!! Shocking, you say? I agree.

The global revenue in 2011 from the cosmetic industry was 38 BILLION DOLLARS!!!!!!!!!!! What the h*ll is going on?! Why are we plastering garbage on our faces? Do we realize we are often *creating* our "problem skin"? Most of "us" started wearing makeup when we were teens with troubled skin. This often irons out as we mature, but the Industry certainly doesn't tell you this!!! They tell you the opposite. I cannot tell you how many things I have heard that make me laugh because I live the opposite. But we all have heard the sales ladies, the advertisements, the commercials, the insane amount of marketing telling women they are not beautiful enough without this or that product to "correct" themselves. Let's call it what it is, its disgusting. It is completely disgusting, and a lie. Is your husband or boyfriend saying the same thing? Let's face it, 99% of cosmetic use is going to be for sex appeal whether you admit it or not, right? So ask them what they think! 9 times out of 10 any man, even "city boys", are going to tell you they absolutely despise makeup & prefer a fresh face. They learn to put up with it because women wear it so often but they don't really like it. So WHY do we do this?! For other women? Or because the media tells us to? Ummmmmm..... we are now outspoken on every other type of media and we still punish ourselves like this? This is just another lie, loves. Think about it!

Then we get so used to putting chemicals (possibly mixed with a few "natural" things) on our skin/faces/hair etc. we think, even if we take a couple-day break, that this is how our skin IS. It is NOT!!!!!!! It is merely a vicious cycle more often than not.....

I used to wear  makeup every day. I broke out like crazy when I did, no matter what expensive or inexpensive brand, formula etc. product I tried. Then what is often the case, women cover it up instead of washing off & letting their starving skin BREATHE. It is an endless cycle & the foundation especially, gets thicker & thicker over the years. They end up looking unreal or like china dolls- I have lots of sweet friends who do this even in the Bohemian/natural/health-obsessed world. I don't usually say anything because I would never want to hurt their feelings, but it looks awful & I cannot understand the concept behind what started all this! Wash that crap off, lol. Let your skin breathe for a day, a week, a month, a year! Seriously, can you believe we are wasting this much $$ globally for "Beauty"??????

WOMEN are beautiful, not makeup! PEOPLE are beautiful!!!!!!! Not foundation & fake colourings!!!!! Can you even SEE your gorgeous natural freckles & beauty marks? Can you feel the wind on your face or is your makeup drying out? Can you run out & play in the rain or did you forget the waterproof mascara this morning? Oh, my God!

And then, WHAT kind of message are we sending to our children?????? Our girls? Our teenagers???? Our "Tweens" now... its getting younger & younger??? "Everyone" at school is doing it....really? Do all women wear makeup? No! Why should all these lovely fresh-faced young girls start younger & younger poisoning their faces? Even if its "natural", anything beyond a pretty lipgloss or nail color for a treat maybe, why should they feel the need to "enhance" their sweet little faces?! To look older because television is sexualizing kids younger & younger & younger??? Is that a good reason, really? Because "everyone" is doing it? They aren't. Plenty of parents DO say no. Or highly regulate these subjects!

I don't have little girls (yet, anyway.... ;-)). I have three lovely little boys. They *love* beautiful "mamas" & "aunties" etc., ladies, fairies, princesses, all that stuff, traditional beauty in the storybooks & movies. But I had a fascinating, eye-opening talk with them about a year ago that they still remember after I forgot even, & it made a profound impact on them. I think they were kind of idolizing a few pretty lady movie stars they saw, I can't remember which ones, maybe like Angelina or J-Lo. Or faces in magazines, air-brushed to perfection... they were making remarks that those ladies were prettier than most people or something, I can't exactly remember. I was disturbed that they were getting caught up in the fake glamour of it all from media, ugh. But what happened next was the good part. ;-) I got the bright idea to Google a few stars WITHOUT makeup, for them, & explain what makeup & airbrushing ("like paint" lol) actually DOES for surface stuff & when they wash their faces, they look a LOT different.... sometimes horrifically so according to Google, LOL. They were so shocked & fascinated, we poured over search images for a good hour or so & talked about it at length!! The initial Dove "Campaign for real Beauty" video of a normal girl they glamourized & made over for about 12 hours or so, before computer-enhancing her face for a billboard, was another great one. Kudos to Dove for their campaign but they are still selling products & capitalizing now on that....for more "beautifying" skincare & etc. LOL! They are a business, not a charity (yes, they donate to charity a small percentage of proceeds, but they are making millions & millions of pure profit too), & they are pulling heartstrings of American women & girls to buy their product for "Real Beauty" now.... Oy vey... (((face-palm)))

For example: Here is a pic of Jennifer Lopez without makeup, compared to what we all know she looks like in the limelight-and I like her, I think of her as beautiful, but this is just a good example:

Actually I just saw this one of Miley Cyrus too, so I'm not providing just one example ;-)

(They look pretty average to me under alllllll that makeup & glamour!)

At any rate, to finish my little story, that simple talk & research, on that rainy Saturday with my small children (ages 6 & 8 now), made such a lasting impact, my eldest child actually brought it up the other day when we were watching a movie on TV & I said absent-mindedly, "Oh she is SO pretty, aww!!", about a cute little fresh-faced young lady. Demetri said, "Yeah Mama but remember, they are wearing heavy paint makeup for TV & don't really look like that under it in real life!!" Awwwww. My little sweetie! I totally had forgotten that talk and here it is almost a year later!! I hope he carries a love for wholesome fresh-faced girls without makeup into his adult life & can help his generation get rid of the fake, false glamour of heavy, toxic cosmetics once & for all. Also I am trying to teach them above all, the beauty of a good character & a loving kind heart, regardless of what the outside looks like. This is the most important thing regardless of race, religion or circumstance. A loving happy HEART will shine through in the bright eyes & smile of a healthy, kind-hearted, wholesome young adult regardless of what their face was born like, it will be BEAUTIFUL. There is no higher beauty than that.

Now let me backtrack a bit. I want to write about good health habits for your skin, and the importance of feeding & nourishing your skin & body. A healthy body, decent exercise, adequate sleep etc., is crucial of course.... but even if you cannot get that (such as long hours at work, college studies, or new parents etc.), why spackle your skin & cover it all up? Our skin TELLS us what it needs! Our eyes do, our skin does, our whole body does. I'm, not saying NEVER wear makeup, but seriously think about this please. If you eat moderately healthy, live a moderately healthy lifestyle, FEED YOUR SKIN edible ingredients to nourish, soothe & protect, you will glow. Period. You may have the occasional flare-up, but who doesn't?! I do once in awhile, but I haven't owned foundation or cover-up in many years!!!!! I get compliments all the time on my skin & complexion. Women ask me what I do. I feed my face & then let it CORRECT ITSELF. Our body is a temple of God. Its a beautiful, living, breathing creation. It is its own support system & if ALLOWED to work, will correct problems on its own or with very little help. I firmly believe this. If it looks dehydrated, flush yourself with water & fresh juices, steamed foods with a little healthy oils, etc. Take care of yourself instead of covering it all up & denying the problems.

Yes, I will readily admit, sometimes for severe acne sufferers or any skin problem, etc. it needs a little medicine or corrective care to alleviate, just like our insides do. But if women just take the time to RESEARCH what they are actually putting on their face & paying a price for, they may want to look into healthier options instead. And for Goodness sake don't plaster cosmetics over the blemishes & medication so they can't breathe.... I only used cover-up & foundation-type skin correctors for a few years in my early twenties & got some severe facial infections trying to hide pimples this way. I did find, however, tea tree oil applied directly to the acne or blemish & allowed to breathe in the open air without makeup, healed VERY fast, within a day or two. I have told lots of people about this if they ask me for natural acne & blemish treatments & its a 100% success rate from what I can think they ever said after trying it. Just a tiny drop will dry them out usually.

So,..... what to do instead of all that makeup....? My immediate response: "FEED your FACE", don't just starve it & cover it up. This is what I think of when thinking about a daily or weekly beauty routine. There are many, many lovely "skin smoothies" you can whip up right in your blender out of fruit & other food ingredients, apply as a mask & wash off.... pure coconut oil, emu oil by the drop etc., these are just terrific & will NOT clog your pores, contrary to common opinion. Ladies, experiment with the same amount of interest you did with makeup as a teen, & you will find what works for your specific skin type to make it glow & shine its best. I have a few personal favourites I'll list below in a bit.

Do you realize, not only the amount of money women are coerced into spending for "beauty" products alone (remember that 38 BILLION....uh, could we boycott it for a year & donate instead just to eradicate world hunger & poverty on a global scale?! Just a thought....), but really researching what toxic products are in things if you choose to continue to use them?  I have made my own organic skincare, as do several of my other friends & family. You all know me as huge into the DIY movement. MOST "natural" (I'm cringing as I write that, ha!) skincare & cosmetic products are still FILLED with at best, inorganic substances & at most, downright harmful ingredients known to cause cancer!! Take Kiss my Face & Jason cosmetics/skincare for examples!! These are available at most health food stores for a very jacked-up, "organic"-feeling price. MOST of these products, turn over & read the back, they are still disgusting!! They almost all contain Methyl & propyl PARABENS.....found in breast cancer cells, & causing a host of problems. Most of the ingredients are still unprounouncable, & I'm not talking about when they spell out the Latin name of herbs & essential oils or vitamins like A (Tocopherol), etc. I'm talking about the exact same, harmful chemicals & preservatives you can find in dollar-store skincare & cosmetics, these companies are shamelessly putting in their product & marketing to unsuspecting, trusting people to make even more of a buck in the Natural industry. Its very sad!!!

Which brings me to, the MAKEUP/cosmetic industry labeling which is much worse than toiletries/skincare-type products, the latter of which at least requires ingredients to be listed on the label. (Think eyeshadow compared to shampoo-where are the ingredients? Many don't list it or are vague.) Ever wonder what is in that expensive "organic" or "99% botanically-derived" cosmetic contains? At least because of demand by consumers, the facts are starting to finally come out!! Many are cancer-causing or linked to very bad reactions, health issues of all types, & are often even downright carcinogenic. I beg you, do a little reading & re-evaluate just WHAT you are putting on your face, or your daughter's faces, & know there are options that are still fun, beautifying to the skin, & create a fresher, healthier, less flawless-obsessed, Natural Beauty. The natural world is so imperfectly beautiful. Should we all look like flawless marble cookie-cutter statues, or all be the individual, unique, brilliant, naturally beautiful people we were born to look like??

Some of the freshest, most BEAUTIFUL faces & pure, gorgeous complexions I have *EVER* seen in my entire 30 years have been among the Amish & Mennonites I grew up with who are forbidden to wear makeup, and likewise Greek nuns who often look a good decade younger than what their real age is. Etc., etc., etc! The latter don't use mirrors & don't even know what they look like after a while, its fascinating. They are smiley, rosy-cheeked, no blemishes, baby-pure skin, fresh-faced to the extreme! Its amazing! The common denominator in both of those groups is not wearing makeup. (Also they both eat home-grown food very often, as an interesting side note.) They look better than most ladies who do, it is really eye-opening. I firmly believe, more often than not, our skin CAN correct itself & bloom regardless of what type we have. The REAL YOU IS BEAUTIFUL!!!! Why not give it a try?

Of course now I am going to share with you all, my personal "Beauty secrets" for free, ;-)  & they are very simple, actually. :) Besides drinking lots of water & good herbal teas, & getting adequate rest & eating healthy, getting exercise when possible, here is my list of actual ingredients, not products, I use:

Will you join me in washing that makeup OFF your face & letting your skin breathe & heal itself? Will you "feed your face" with me? Will you save *bucketloads* of money & look into simple, effective, DIY recipes & tricks from the grocery store or farmer's market to use in place of toxic "cosmetic" paints, basically? I'm not asking you to never wear makeup again. I'm asking you to let your face detox & actually get COMFORTABLE with the real you. (It even took me a couple years to get comfortable again, when I got caught up in makeup the few years I started wearing it, I thought I looked awful without eye makeup & blush to define everything....!)

And to be honest, I do still own a makeup bag, & its not even completely organic.... BUT I only use it maybe once every 6 months LOL.....just for pure FUN if I feel like wearing colorful eyemakeup for a special occasion or to dress up.... not every day, or every week, or even every month, but once in a blue moon, & its fun sometimes! I have to admit the last few times though, I didn't enjoy it & washed it off an hour later lol. My skin felt like it couldn't breathe even though I only had on blush & eye makeup, heh! But on a daily basis my skin is free, uncluttered, feels really healthy & wonderful, and I get compliments on my clear complexion like I said.... Use it for special occasions or just skip it altogether! :) If you want to slowly wean off if you have serious blotches or skin problems, start trying to just wear less & less every day & if you don't have to go out in public, don't wear it at all. Don't sleep in it obviously. Detox yourself from the habit, like quitting cigarettes almost. It can be a real habit or crutch! Don't let it be. You are so BEAUTIFUL without it & your skin WILL correct itself & glow by itself! "Feed your face," & shine!

If you feel "naked" without makeup, tempted to cover it back up for short-term effect instead of long-term investment, I'll tell you another thing that is REALLY fun to do to distract yourself & feel "pretty". I started getting really into awesome Bohemian, global accessories a few years back, to go with anything from jeans to a sundress. Instead of spending time on toxic makeup & focused on just the face which is silly anyways, I match some awesome bangles & a chunky necklace or pair of earrings to my outfits, & forgot all about makeup LOL. Voila! Think of the whole pic, not those pores only you can see (You don't know it yet, but no one is standing over your face with a magnifying glass. Step BACK from that mirror, lady! ;-))  Now I have lots of cool jewelry accessories I've made or thrifted (Or re-made from thrifted or broken pieces, its so fun & they look beautiful & ever-changing!!).... You can still have a *stunning* look without spackling your face & putting chemicals on your eyes & skin. And making & wearing a few adorable necklaces or bangles etc., or creating a few yummy DIY skin-nourishing recipes together, is a LOT healthier & cuter of an image to send to our little girls & teenagers than the whole cosmetic/media mess, aww. Join me, & the rising number of lovely fresh-faced ladies who are rejecting this cultural fake image, & feel the freedom!!!!

In conclusion: Just be YOU, & love yourself. Don't be afraid to go bare! "Going bare", for your face that is, is the NEW sexy!!!!! Big smile now! Xxo!

      Warmly, with love,
      Christine Elizabeth
